How to Make a Keto Chipotle Bowl. A step by step guide to making a low carb version of your favorite Chipotle Burrito Bowl. These homemade Chipotle Bowls are great for meal prep!
We love Chipotle Burrito Bowls, but we don’t always have time to go out and pick one up. And I’m not fortunate to live close enough that I can do Uber Eats or Door Dash.
Plus, we’ve both been doing a lot of traveling and we like to save money when we can. Making our version of keto Chipotle Bowls are a great way to save money! It’s a great budget friendly meal especially if you shop the farmer’s market for produce or places like Aldi where produce is cheap!

Keto Chipotle Burrito Bowl Ingredients
- Romaine lettuce, chopped
- Cauliflower, “riced”
- Shredded beef
- Red onions, sliced
- Bell peppers, sliced
- Mexican cheese, or any type you like
- Cherry tomatoes
- Limes
We skip the rice and beans and instead opt for cauliflower rice. You can also add in black soy beans if you want. They are a great low carb bean alternative with 8g carbs and 7g fiber per 1//2 cup (1g net carb).
We also opt for fresh cherry tomatoes instead of salsa. But if you have a homemade or low carb salsa you like, you can use that instead.
How to Make a Chipotle Keto Bowl
First take a head of cauliflower and make cauliflower rice. We love this Copycat Chipotle Cilantro Lime Cauliflower Rice recipe. Place the cauliflower rice in the bottom of your glass meal prep container.
Next layer on your cooked shredded beef, sliced onions, sliced bell peppers, chopped cherry tomatoes. Then sprinkle some cheese and spritz with lime juice. Alternatively you can leave lime wedges in your container to squeeze the juice on later.
We store these in the fridge for up to 4-5 days. After that the lettuce tends to get soggy.

Also, when at Chipotle we omit the salad dressing and instead add guacamole and sour cream.
When we meal prep our own keto Chipotle burrito bowls, we buy the little single servings of guacamole. You can pick them up at most groceries stores. Or you can make a homade guacamole recipe and divide it up into containers yourself.
What can you put in a Chipotle bowl? Pretty much any low carb vegetable and some low carb fruits (peppers, tomatoes, avocado etc).
