This super easy Shredded Beef Keto Taco Salad Recipe will be your new go to for lunch! It utilizes leftover shredded beef to make this delicious taco salad bowl! You’ll have a weeknight meal in less than 5 minutes!
For nights when you need a quick and easy dinner this taco salad recipe with shredded beef is calling your name! It’s also great if you’re looking to meal prep lunches for the week! Another quick and easy lunch we make frequently is this charcuterie and cheese lunch box.
Pro Tip: Why we love this recipe. You can make everything for this meal AHEAD OF TIME. That means this meal can be made in less than 5 minutes!
Pre-cook the shredded beef or buy unseasoned shredded beef from the store. Chop up a head of romaine lettuce or buy a bag of lettuce. Dice up your bell peppers, red onions and cherry tomatoes. Either make a salad dressing or use a store bought brand.
The longest part of this recipe is re-heating the shredded beef or taking the tops of all the lids LOL.
What is the best taco salad dressing?
Some people love classics like ranch dressing or homemade salsa. Others prefer guacamole and sour cream. Or if you’re like me, I prefer mixtures such as southwestern ranch or avocado lime dressing.
Just make sure you choose a dressing low in carbohydrates if your trying to eat low carb or keto.

How to make taco salad keto?
Two of the most popular taco salad recipes are the Dorito Taco Salad and the Taco Bell Taco Salad. I have to admit that I used to get Taco Bell’s taco salad almost every time when I went there.
There is something about their crispy fried taco shell that makes their taco salad better than many on the market. Now we know that their taco salad isn’t keto, but if you’re missing a crunch we’ve got you covered!
To get that crunch we suggest making our keto tortilla chips and cutting them into strips instead of chips. Then using them to top this keto taco salad recipe.
Taco Salad Calories
The most calorically dense item in this low carb taco salad would be the dressing that you top it with. If you want to keep this healthy taco salad light in calories you might want to top it with a salad based dressing.
If you want a higher calorie salad, try going with an avocado or oil based salad dressing. Just make sure that the salad dressing uses either an olive oil or avocado oil as the base instead of canola oil or vegetable oil.
How to make shredded beef taco salad bowls
This shredded beef taco salad recipe is so easy to make! You probably have most of the ingredients in your fridge already.
Since both Faith and I are huge fans of meal prepping, we typically dice up a bunch of veggies so we can throw together meals on a whim like this keto taco salad.
First you’ll add shredded lettuce to a bowl, then dice a few cherry tomatoes, add diced red onions and bell peppers.
Re-heat your shredded beef and add to the salad. Next, slice up a scallion and top with crumbled Mexican cheese and a squeeze of lime juice.
If you’re like me you’ll probably want more than lime juice to eat your salad with. This has been my go-to pre-made keto ranch salad dressing.
