Pulled BBQ beef reminds me of summer and backyard BBQs. Now my parents weren’t one to make pulled barbecue beef, but instead they’d buy one at the grocery store that was full of sugar and carbs. But man did it taste good!
We’d put that stuff on sandwiches, eat it on the side with mac and cheese and it was perfect for leftovers!
Today we’ve re-created one of my childhood favorite meals but in a keto friendly way! You’re gonna love this keto pulled BBQ beef!
Ingredients for Pulled BBQ Beef
- cooked shredded beef
- sugar free BBQ sauce
- salt
- black pepper
- scallion, green and white parts, thinly sliced, for garnish
- minced red onion, for garnish
How to Make Pulled BBQ Beef
Our pulled beef BBQ recipe uses pre-cooked or leftover shredded beef. You can use store bought pulled beef (no sauce) or you can follow either of the cooking methods below to make shredded BBQ beef.
First add cooked shredded beef, sugar free BBQ sauce, salt and pepper to a medium saucepan over medium heat. Cook until warm throughout. This should take about 5 minutes. Be sure to stir frequently.
Next remove from heat. Finally, serve with sliced scallions and red onion sprinkled on top.
How to Make Crockpot BBQ Beef
To make crockpot BBQ beef is actually very easy! First, plug in your crockpot. Next, place the chuck roast in the crockpot.
Then, sprinkle the chuck roast with salt and pepper. Next, add the lid to the crockpot and secure. After that, you will set your crockpot on low for 7-8 hours.
Once the timer goes off you will want to carefully shred the beef. You can do this by using 2 fork or a hand mixer, whichever you prefer. Finally, add your sugar free BBQ sauce and stir. Then transfer it to a serving platter.
Sprinkle the scallion and minced red onion on top and serve.
How to Make Instant Pot BBQ Beef
First, you’ll get a chuck roast and then pat the meat dry with paper towels and season on both sides with salt and black pepper. Next, turn the Instant Pot on to the “Sauté” function. Wait for it to heat up, then add the chuck roast.
Let it sear on the first side, and then flip it and let it sear on the second side. Once seared, add water (or beef stock).
Next, secure the lid and turn the pot on to Manual, High Pressure. Once fully cooked, let it do a natural pressure release. Lastly, just shred the beef with 2 forks, add sugar free BBQ sauce and stir. Then, transfer it to a serving platter.
Finally, Sprinkle the scallion and minced red onion on top and serve.

Chuck Roast for Barbecue Cooking Times
That time it takes to cook a chuck roast entirely depends on your cooking method! When you’re in a pinch and need your shredded BBQ beef quick, we suggest cooking it in a pressure cooker or Instant Pot. You can have fall apart shredded beef in under 2 hours start to finish.
If you have all day to let your beef roast cook, we suggest cooking it in a slow cooker. This method takes around 8 hours but the flavor is a little bit better than if you were to use a pressure cooker.
What Cut of Beef is Good for Shredding?
We prefer to use a chuck roast for shredded BBQ beef because it falls apart easily. It’s got a good bit of fat on it so it’s not super lean and likely to be tough when cooked.
