Fall is officially here! Lara and Faith have been doing a lot of traveling and smoothies are a great on the go meal or snack!
Lara’s been doing a lot of driving (she drove from Florida to Washington state) and smoothies are an easy option for her to make in her converted Sprinter van. There’s no special ingredients, and then all you need is a blender and some ice!
This low carb smoothie is literally done in less than 5 minutes so there’s no excuse to not make it. Unless you don’t have the ingredients that is.

Honestly, we like that smoothies can be so versatile! First choose a liquid base (unsweetened almond milk, cashews milk, coconut milk, flax milk, oat milk).
Then choose a thickening agent (chia seeds, flax seeds, xanthan gum). Next choose a fat source (MCT oil, MCT oil powder, peanut butter, almond butter).
Finally, choose you flavor profile (greens, berries, chocolate, vanilla, pumpkin, etc). Then you just blend those ingredients together, add some ice and blend again.
You can even make smoothie freezer packets for meal prep. They’re great for those morning when you’re late in the morning.
Or it’s a great way to use up leftover produce. You can freeze them so it doesn’t go bad!

- unsweetened pumpkin puree
- unflavored whey protein powder
- MCT powder
- golden flaxseed meal
- stevia/erythritol blend
- milk of choice
- pumpkin pie spice mix
- vanilla extract
- apple cider vinegar
- salt
- ice cubes

How to make a Low Carb Pumpkin Smoothie
Step 1: Add all ingredients except the ice to a blender and process until smooth.
Step 2: Add the ice and pulse until thick and creamy.
Step 3: Pour into a glass and drink up. Makes 1 very large smoothie or 2 smaller smoothies.

Keto Pumpkin Smoothie
What You'll Need
Ingredients
- 1/4 cup pumpkin puree unsweetened
- 1/4 cup whey protein powder unflavored
- 2 tablespoons MCT powder
- 1 tablespoon flaxseed meal golden
- 2 packet erythritol stevia/erythritol blend
- 1/2 cup almond milk unsweetened, can you any low carb milk option
- 3/4 teaspoon pumpkin pie spice plus more for garnish if desired
- 1/2 teaspoon vanilla
- 1/4 teaspoon apple cider vinegar
- 1 pinch salt
- 1 cup ice cubes
Instructions
- Add all ingredients except the ice to a blender and process until smooth.
- Add the ice and pulse until thick and creamy.
- Serve immediately.
