Prior to going keto I used to get that huge bucket of cookie dough from SAMs and just eat it with a spoon. So when faith made an edible low carb chocolate chip cookie dough it was a game changer.
And if you know me personally you’ll know that my favorite food is ice cream and my second favorite food is chocolate, and my third favorite food is probably a tie between steak and chocolate chip cookie dough.
Moving up quick in the ranks is chicken tikka masala and butter chicken. I’ve been going through a bit of an low carb Indian food obsession lately.
So this Keto Chocolate Chip Cookie Dough Ice Cream has pretty much been one of my favorite foods that we’ve made for the blog. It all stemmed from when we were working at my Aunt and Uncle’s house up in Ponte Vedra Beach and we got a hankering for a really good low carb ice cream.

- Low carb vanilla ice cream such as Enlightened, Rebel Creamery or Killer Creamery
- Low carb chocolate chips such as Lily’s, Choc Zero, Explorado Market
- Keto Chocolate Chip Cookie Dough
How to make keto chocolate chip cookie dough ice cream
So we went the lazy man’s route on this recipe by starting with store bought low carb ice cream. But where we didn’t skimp, was by making our homemade crunchy keto chocolate chip cookie dough.
We’ve made a bunch of low carb chocolate chip cookie dough type recipes such as Chocolate Chip Cookie Cups with Chocolate Buttercream, Chocolate Chip Keto Blondies, and Keto Chewy Chocolate Chip Cookies. But the crunchy variation is our favorite to eat as a dough.
Basically you whip up the cookie dough and let it chill in the fridge for a few hours or place it in the freezer for 20-30 minutes to chill quicker. Then let your favorite low carb ice cream thaw for a bit.
After that, scoop out your desired amount of ice cream into a bowl. Next use a spoon or cookie scoop to grab desired amount of cookie dough. Finally top with low carb chocolate chips.
If you want to get a little more fat into this dish, I like to put non-whipped heavy whipping cream on top. It kind of makes an icy texture on top of the ice cream. I used to do this as a kid but with regular milk and ice cream.
Is it safe to eat chocolate chip cookie dough ice cream?
Per the FDA, it is safe to eat store bought chocolate chip cookie dough ice cream because the flour has been heat treated and the eggs have been pasteurized.
Personally, Faith and I have not used any special flours or pasteurized eggs while making this recipe. We’ve probably made this at least 5 times together and typically use either local eggs, Vital Farms or Egglands Best eggs without issues.
Can you make cookies from cookie dough ice cream?
Now I’ve never tried to make cookies from chocolate chip cookie dough ice cream, but I’m assuming as long as they still have a leavening agent the cookies should bake up. With our chocolate chip cookie dough ice cream recipe, you can definitely make cookies 🙂

Ingredients
- Low carb vanilla ice cream such as Enlightened, Rebel Creamery or Killer Creamery
- Low carb chocolate chips such as Lily's, Choc Zero, Explorado Market
- Keto Chocolate Chip Cookie Dough
Instructions
- First make our crunchy keto chocolate chip cookie dough and let chill for 2 hours. Once chilled you can roll into balls, scoop out with a spoon or small cookie scoop/melon baller.
- Then thaw out low carb ice cream. Scoop ice cream into a bowl.
- Top ice cream with cookie dough and chocolate chips.
