Garlicky Cast Iron Green Beans is a delicious spin on fresh green beans. This low carb vegetable pairs nicely with any entree and is done is less than 25 minutes!
Growing up in Florida we grew fresh green beans in the garden every year. Going out to the garden with my dad to pick fresh vegetables is one memory that is still vivid in my head to this day.
Side note, always wear some kind of shoe in the garden or forever be petrified like I was. When I was like 4 years old I stepped on a dead black snake.
In my head that snake was ginormous, but to this day my dad still says it was a harmless small garden snake.
Green beans are a budget friendly low carb vegetable that sometimes gets over looked. Some people think that because it has the word, “bean” in it that you can eat it on a keto diet.
The same goes for black soy beans. Both of these foods are low in carbs and perfectly acceptable on a keto or low carb diet!
Black soy beans and green beans are both technically legumes but we like to include them on our low carb vegetable list for simplicities sake.
Cast Iron Green Bean Ingredients
- Butter
- Avocado oil
- Green Beans
- Garlic
- Chicken Stock
- Salt
- Black Pepper
Why do we use both avocado oil and butter in this recipe?
First off, we love the taste of a good grass-fed butter. Especially the nutty flavor when it gets browned.
We especially like the flavor of garlic when it’s cooked in butter. Sometimes though butter can over power other flavors and we wanted the garlic to be the star of this recipe.
That’s why we added avocado oil to this dish as well. It’s also a way to increase the date content of this dish.
How to make Garlicky Green Beans in a cast iron skillet
First, you will need freshly steamed green beans.
Pro tip: If you don’t want to get fresh green beans from the farmers market and trim the ends off, you can buy one of the steamer bags from the product department at your local grocery store.
Next, grab a large cast iron skillet and heat it over medium to medium high heat. Then add the butter and oil.
Once the butter is melt, add the green beans. And all remaining ingredients. After that, cover the skillet for 10 minutes stirring occasionally.
Finally, uncover the skillet and cook until the liquid is evaporated, for about 5 minutes. The green beans should start to brown in spots.

- 1 pound Green Beans ends trimmed and steamed until fork tender
- 2 cloves Garlic thinly sliced
- 1/2 cup Chicken Stock
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
