This drool worthy homemade keto pimento cheese dip is one of Lara’s favorite recipes. She grew up eating store bought pimento cheese all the time.

We keep leftover pimento cheese dip in an air tight container in the refrigerator for 5 to 7 days.

Pimento cheese is typically thought of as a southern thing, but actually it was first made in New York! In the south you’ll typically see pimento cheese as a dip, sandwich, grilled cheese, deviled eggs and even on burgers!

Easy Pimento Cheese Dip
- 3 cups pimento cheese
- 1 scallion green and white parts, thinly sliced
- Preheat the oven to 400F.
- Spread the pimento cheese evenly into a 1-quart casserole dish. Sprinkle the scallion on top.
- Bake until warm and bubbling, about 15 minutes, and then broil to brown the top (stay with it,
- this happens fast!).
- Serve warm.
