The Best Tender Marinated London Broil Recipe
Marinade Ingredients
- Red wine vinegar
- Extra-virgin olive oil
- Garlic
- Rosemary
- Thyme
- Lemon juice
- Salt
- Black pepper
Step-by-Step Instructions
- Prep your ingredients.
- Add the vinegar, oil, garlic, rosemary, thyme, lemon juice, salt, black pepper, and steak to a gallon-size plastic bag.
- Look at those herbs and seasonings – you just know this will be delicious!
- Seal the bag and squeeze everything around to massage the meat.
- Place the bag in a large bowl and refrigerate for 8 hours (or up to 2 days).
- Remove the steak from the fridge and let it sit for 10 minutes. Position a rack directly under the broiler. Preheat the broiler to HIGH. Cover a large baking tray with foil. Remove the steak from the plastic bag, and transfer it to the prepared tray. Discard the bag and marinade.
- Broil the steak for 6 to 8 minutes on the first side and then flip and broil about 4 to 5 minutes on the second side, or until an internal temperature reaches 135F (for medium rare).
- After broiling, let the steak rest for 10 minutes before thinly slicing across the grain.

After cooking, leftovers will stay good for up to 4 days in the fridge.
Variations on This Recipe
- Change the vinegar. If you don’t have red wine vinegar, white wine vinegar or apple cider vinegar are also good options.
- Switch up the fresh herbs. Use whatever fresh herbs you like or have on hand. Oregano is another one of our favorites.
- Add onion to the marinade. Simply slice up half of a yellow onion and add it to the marinade.
