Homemade White Bread Recipe
Ingredients
- Avocado oil spray for the pan
- 1/2 teaspoon instant yeast
- 1 tablespoon warm water
- 6 large eggs
- 1/2 teaspoon cream of tartar
- 6 ounces cream cheese softened slightly
- 2 tablespoons heavy whipping cream
- 1 teaspoon apple cider vinegar
- 5 drops liquid stevia
- 1/2 cup unflavored whey protein powder
- 1/2 tablespoon psyllium husk powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
Instructions
- Preheat the oven to 300F; line a 9 by 5-inch loaf pan with parchment paper and lightly
- spray the inside with avocado oil.
- Add the yeast and warm water to a small bowl and stir to combine. Set aside until it’s foamy, about 5 to 10 minutes.
- Separate the egg whites from the yolks, each in its own large bowl.
- Add the cream of tartar to the bowl with the egg whites. Use a handheld electric mixer to
- beat until the egg whites form stiff peaks. Set aside for now.
- Add the cream cheese, heavy cream, vinegar, stevia, and foamy yeast mixture to the bowl with the egg yolks. Beat until well combined. Add the whey protein powder, psyllium husk
- powder, salt, and baking soda and beat until smooth.
- Fold the egg whites into the egg yolk mixture a little at a time, being careful not to
- deflate the whites (a few streaks or lumps of egg whites are fine).
- Pour the batter into the prepared loaf pan and bake for 1 hour.
- Turn off the oven and let the bread cool in the oven (oven off, door closefor 30 minutes.
- Cool completely before slicing.
Notes
- This is almost zero carb white bread! Each serving (1 slice) has just 1g net carbs (based on 10 slices per loaf).
- Don't skip the cool time in the oven, it helps prevent the bread from deflating.
- We all know warm bread is amazing, but let this loaf cool completely before slicing for the best results.
- This bread is quite different from regular bread and it doesn’t toast evenly in a regular toaster! To toast this “White” Bread, we recommend broiling it until golden on each side; but stay with it, the broiler can be tricky! It’s only when you walk away from it that something burns under the broiler.

Ben says
This is good. But it tastes more like eggs than bread. Understandably. Mine also came out under done and I let it cool in the oven as written (never opened it). It’s good enough to try a 2nd time. I’ll bake a bit longer. Probably my oven. For those looking for Psyllium husk powder at the grocery store. Look in the Metamucil aisle. Make sure to find no sugar and unflavored.
Roxanne says
Can you make this in a breadmaker?
Lara says
Hi Roxanne,
We have not tried making it in a bread maker yet.
cindy says
is all the recipes you have contain Instant Yeast in your Keto Bread by Faith Gorsky & Lara Clevenger?
Faith Gorsky says
Cindy, Not all of them include instant yeast, but many do! It helps with a “bready” aroma, but you can omit the yeast if you prefer. 🙂
Shawn says
Fantastic bread made 5 loaves, freezing the rest, we have a Winco Food Stores here in Arizona they sell bulk, I hope you have one close to get the ingredients! ✔️✔️✔️
Jane c Greer says
OMG This is fantastic!!! Made it yesterday, and it is the best bread! It is labor intensive but SO worth it! Was wondering though, does it need to be kept In the refrigerator and can you freeze it?
Faith Gorsky says
Jane, We’re so happy to hear you love the recipe!! I typically cover the loaf after it cools and leave it at room temperature overnight, and then the next day wrap it and store it in the fridge. I haven’t tried freezing it yet, but I would slice it first and then wrap each slice in parchment paper and store it in a a zip-lock bag or an air-tight container. If you freeze it, please let us know how it goes!
JRose says
Is there a good substitute for whey powder?
Faith Gorsky says
JRose, Unfortunately for this recipe, the whey powder is integral for the structure. We have another keto bread recipe that doesn’t use whey powder if you’re interested: https://theketoqueens.com/keto-bread/
Darla Lyons says
Holy Smoke. I just hope I can find Psyllium Husk whatsy doosie.
Faith Gorsky says
Darla, Good luck finding it! We get ours on Amazon.
Shawn says
We have a Winco foods here in Phoenix, that carries bulk foods, I hope you have one close!
Bev Kidd says
The taste of the bread is so good. I’ve made it 2x now and followed your directions to a T but it keeps going flat on me, do you have any suggestions ..I’m at a high elevation do you think I should turn the temp up a little bit? Thank you:))
Lara says
We’re glad that you like the bread! We are only at 11ft above sea level and that may be why you are having a different result. Honestly I (Lara) have no experience cooking at higher elevations living in Florida all of my life, I’m sorry!
Janet M Gindhart says
Just getting started on the Keto diet. Need your help with ideas. Love your recipes. However I never heard of psyllium husk. What is it and where can I find it in the market?
Thank you!
Lara says
Hi Janet,
Thank you so much for reaching out! We normally get our psyllium husk from amazon. Here’s a post we wrote about keto flours and it links to the psyllium husk we use. https://theketoqueens.com/the-best-flours-to-use-on-a-keto-diet/
Darlene says
What can be substituted for the liquid stevia?
Lara says
We don’t recommend omitting the stevia – it helps to counteract the eggy flavor of the bread.
