So when you think of grilled cheese, you probably don’t think “low-carb”. Let’s change that! To make your grilled cheese sandwich keto, simply follow our recipe for homemade keto white bread!
Our keto white bread has almost zero carbs and is freaking delicious… for real. Substitute this in place of tradition high carb white bread and you’re good to go!

One serving (½ sandwich) of our low carb grilled cheese has about _____ calories. This may seem like a bit much but believe us, you will definitely not regret it once you sink your teeth into this baby. Also, it has BBQ Beef in it, which a normal grilled cheese does not.
BBQ beef not only provides additional calories, but it also comes with fat soluble vitamins and high quality protein! A traditional grilled cheese sandwich has about 300 calories.
How many carbs in a grilled cheese sandwich?
There are only about 6g of total carbs, 4g of fiber and 2g net carbs in one serving (½ sandwich) of our low carb grilled cheese! Per the USDA Database, traditional grilled cheese sandwiches have around 15 grams of carbs per half sandwich. This can fluctuate some depending on which type of bread is being used.
How to make the perfect grilled cheese
When it comes to the perfect grilled cheese, low and slow for the heat source is the best way to go! That lets the cheese melt at the same rate that the bread gets golden brown.
If you feel like adding a little extra pizazz to your keto grilled cheese, try topping or serving your sandwich with our pickled red onion, dill pickles, or our homemade sugar free BBQ sauce!
How to make grilled cheese without butter
If you’re out of butter or looking for a substitute, fear not. Try using olive oil or even mayo, and spread a thin layer over the bread in place of the butter. This should still give you a savory taste and a nice, crispy toasted effect on your low carb grilled cheese.
What cheese should I use for grilled cheese?
For our 3 cheese grilled cheese, we used cheddar, mozzarella, and smoked gouda all on the same scrumptious sandwich. These are some of our favorites for a keto grilled cheese, but feel free to switch up the cheeses for your favorites!
Is cheese keto friendly?
Let me put it this way.. a love for cheese and a keto lifestyle are a match made in heaven. Cheese is our best friend and we don’t need to change a thing about it to make it keto friendly!
Can I eat a sandwich on keto?
Yes you can! Just swap your average carb-loaded bread for our homemade white bread recipe and slap your favorite meats and cheeses between those slices!
Using a modified bread recipe like ours is the key to enjoying a guilt-free sandwich. As long as you make sure the other ingredients of your sandwich have minimal carbs, you’re good!
Pro Tip: If you don’t feel like making grilled cheese, you can make an open-face sandwich. Just spread the beef on 1 slice of bread, top with cheese, and broil until the cheese is melted.
Can grilled cheese sandwiches be frozen?
Yes, they can! Freezing a cheese sandwich to be grilled later is super convenient and odds are, you’ll be thanking yourself in the future.
To freeze your grilled cheese sandwich, first assemble two slices of bread with cheese in between. Then, seal your cheese sandwiches in freezer bags, remove the air, and date them.
Keep your sandwiches in the freezer for up to three months! When you’re ready to cook them, simply pull them out, butter the outsides, and grill those bad boys up!

3 Cheese Grilled Cheese with BBQ Beef.
Ingredients
- 2 slices homemade keto white bread
- 1 tablespoon unsalted butter
- 1/2 cup pulled BBQ beef
- 2 slice cheddar cheese
- 1 slice mozzarella cheese
- 1 slice Gouda cheese
Instructions
- Spread the butter on 1 side of each slice of bread.
- Place 1 piece of bread (butter-side-dowinto a nonstick skillet). Top with the cheddar, and then spread on the BBQ beef. Top with the mozzarella and Gouda, and then place the 2nd slice of bread (butter-side-on top).
- Cook over medium-low heat until the bread is toasted and the cheese is melted, flipping once.
- Serve warm.
