Tender, juicy and delicious Herb Marinated London Broil is naturally keto! It’s impressive enough to entertain with, but easy enough for weeknight dinner. And the best part is, you don’t need an expensive cut of meat!
Add the vinegar, oil, garlic, rosemary, thyme, lemon juice, salt, black pepper, and steak to a gallon-size plastic bag.
Seal the bag and squeeze everything around to massage the meat.
Place the bag in a large bowl and refrigerate for 8 hours (or up to 2 days).
Remove the steak from the fridge and let it sit for 10 minutes. Position a rack directly under the broiler. Preheat the broiler to HIGH.
Cover a large baking tray with foil. Remove the steak from the plastic bag, and transfer it to the prepared tray. Discard the bag and marinade.
Broil the steak for 6 to 8 minutes on the first side and then flip and broil about 4 to 5 minutes on the second side, or until an internal temperature reaches 135F (for medium rare).
After broiling, let the steak rest for 10 minutes before thinly slicing across the grain.
Notes
What Cut of Meat to Look For: There are a few different cuts of meat that are typically used to make London Broil, including top round steak or flank steak. You will also sometimes find these cuts of meat labeled as a London Broil in grocery stores.
If You Don't Have Fresh Herbs: You can use dried herbs instead; use 1/3 of the amount, so 1 teaspoon dried herbs instead of 1 tablespoon fresh herbs.
Storage: Before cooking, you can marinade this for up to 2 days in the fridge. After cooking, leftovers will stay good for up to 4 days in the fridge.
