Pickled Red Onions are the perfect way to kick up your tacos a notch! They’re a tad bid tangy and pack a bunch of flavor. They’re super easy to make, plus are eye catching for all of those food photographers out there!
So I can honestly say I was never a huge fan of onions until I became a food photographer. I never had appreciation for the flavor that they could bring to a dish.
It wasn’t until I made caramelized onions for a steak recipe, that I became a true believer. They were more than just a vegetable that could bring a grown man to tears.
They were pure foodgasm if you knew how to cook them correctly.
Today we’re going to show you an easy quick pickled red onion recipe. And since you know we eat low carb, we’re going to make these pickled red onions with no sugar.
In our recipe we swap out the normal table sugar for a liquid stevia extract. We’ve only tested this recipe with stevia extract, but it could possibly work with other low carb keto sweeteners.
The sweetener helps balance out the saltiness of the brine (water, salt, and vinegar) which the onions are soaked in.
How long do pickled red onions last?
When stored properly in an air-tight glass container, pickled red onions can last up to a few weeks in the fridge. We recommend you eat them within the first week for best flavor and texture.
What do you do with pickled red onions?
- Top them on tacos with a Mexican cheese
- Use as a salad ingredient to bring a tangy pop of color to the dish
- Add some flavor to your favorite omelet or frittata recipe
- You can even add these to a burger!

- thinly sliced red onion
- water
- apple cider vinegar
- salt
- liquid stevia extract
How to Make Pickled Red Onions (No Sugar)
Pickled red onions are insanely easy to make even with no sugar! First you will want to thinly slice an onion.
Do so carefully with a sharp knife or with a mandolin. The later is my go to. I got one from Pampered Chef like 7 years ago and it still works amazingly well!
Then you will want to add the sliced onions and the remaining ingredients into a glass jar. Next give the ingredients a quick stir and then store in the fridge for at least 8 hours.
That’s it!
Pro tip: store the pickled onions in a glass jar with a tight sealing lid such as a mason jar. This will make them last for up to 2 weeks!
Do not store your pickled red onions in a metal container because it may react to the vinegar.

Quick Pickled Red Onion Recipe
Ingredients
- 1 cup red onion thinly sliced
- 3/4 cup water
- 4 tablespoons apple cider vinegar
- 1/2 teaspoon salt
- 10 drops stevia extract
Instructions
- Add all ingredients to a glass mason jar, cover the jar, and refrigerate 8 hours.
- Store in the fridge for up to 2 weeks.
