Our keto simple syrup recipe just made low carb cocktails a lot more fun! This sugar free simple syrup tastes great in whiskey sours, old fashions, lemon drops and many more!
A typical recipe for simple syrup calls for equal parts of sugar and water. Basically you heat the mixture until the sugar dissolves.
This mixture is then used in place of sugar for sweetener in many cocktails.
Obviously on a keto diet you are not going to want to use a regular simple syrup! It will have way too many carbs for many people to stay in ketosis.
Instead make our keto simple syrup recipe. You can use it 1 for 1 to replace a traditional simple syrup.

- Whiskey Sour
- Boston Sour
- New York Sour
- Amaretto Sour
- Mojito
- Lemon Drop
- Sazerac
- High Tea
- Sherry Cobbler
- Daiquiri
These are just some of the cocktails that are made using simple syrup. You’ll note a lot of sour recipes use simple syrup as so daiquiris.
Keto Simple Syrup Ingredients
- granulated monkfruit/erythritol blend
- water
- cream of tartar
- liquid stevia extract
PRO TIP: Do not use straight granulated erythritol for this sugar free simple syrup recipe.
We found out through trial and error that a monk fruit and erythritol blend works better in making keto simple syrup. Previously we tried making it with just straight granulated erythritol.
With the granulated erythritol it began crystallize and harden. With the monk fruit and addition of liquid stevia extract it comes to the perfect consistency and sweetness.
No bitterness from the stevia extract and no cooling effect from the erythritol.
How to Make Keto Simple Syrup
First, add all ingredients to a medium saucepan over medium heat. Next, bring to a boil, and then cook for 2 minutes. Swirl the pot to help the sweetener dissolve, but don’t stir.
Finally, remove from heat and cool to room temperature. Store in a covered glass jar in the fridge for up to 1 week.
Our recipe makes 1 1/2 cups of simple syrup. Please note most recipes call for simple syrup in ounces. 1 ounce = 2 tablespoons. Our recipes makes 24 tablespoons.

Keto Simple Syrup
Ingredients
- 1 cup granulated monkfruit/erythritol blend
- 1 cup water
- 1/4 teaspoon cream of tartar
- 7 drops liquid stevia
Instructions
- Add all ingredients to a medium saucepan over medium heat. Bring to a boil, and then cook 2

Notes

- Recipe makes 1 1/2 cups (or 24 tablespoons) of keto simple syrup.
- Typically cocktail recipes will use simple syrup in ounces. 1oz = 2 tablespoons.
- Please note the carbohydrates in this recipe all come from sugar alcohols. This is a 0g net carb keto syrup.

Dear Keto Queens,
I made your recipe but doubled it. Let it cool and then refrigerated it. The next day I was deeply saddened to see it had crystallized. I want to use it in Limoncello but now I don’t want to waste all that I’ve done so far making the Limoncello. What to do???

D.Kirby, If it crystallizes you can reheat it to dissolve the sweetener. Also, we’ve been doing some experimenting with keto sweeteners, and we find that if you use allulose instead of a monkfruit/erythritol blend it doesn’t crystallize even once it’s refrigerated.

Is this a misprint?
1 cup of water to 1 cup of the sweetener?

This is correct. For a traditional simple syrup you use a 1:1 ratio as well.
