Ingredients
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 2 cloves garlic (crushed)

- 2 pounds bone-in lamb loin chops about 8 chops (1-inch thick)
Instructions
- Stir together the oil, lemon juice, garlic, rosemary, salt, and black pepper in a large bowl. Add the lamb and toss to coat. Cover the bowl, transfer it to the fridge, and let it marinade for at least 2 hours or up to 1 day.
- Let the meat sit at room temperature for 15 minutes before grilling.
- Grill the lamb chops over medium to medium-high heat until they reach your desired level of doneness, flipping once halfway through. These take about 4 to 6 minutes per side for rare and 5 to 7 minutes per side for medium-rare.
- Transfer the chops to a platter and let them rest for 3 minutes. Serve.
Notes
- Make sure you let the meat marinate for at least 2 hours, but if you have the time 24 hours is best.
