- 8 ounces chicken breast cooked and chopped
- ½ small shallot minced
- 6 tablespoons mayo
- 2 tablespoons minced fresh parsley
- 1 teaspoon minced fresh thyme
- ¼ teaspoon garlic powder
- ¼ teaspoon sweet paprika
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
- 3 tablespoons toasted almond for topping
- 3 large stalks celery cut into sticks
- ½ cucumber cut into rounds
- Stir together all ingredients except the almonds. Sprinkle the almonds on top of the chicken salad
- Serve the chicken salad along with the celery and cucumber for dipping.
