This easy-to-make Chicken Cordon Bleu Casserole has the same flavors as a classic chicken cordon blue recipe, but it utilizes leftover chicken! Zucchini and chicken are baked in a creamy, flavorful three-cheese sauce and topped with just a little bit of crisped bacon or pork belly.
With just 20 minutes of hands-on prep time, this is a fairly easy weeknight-friendly (and family-friendly!) meal.

- Onion
- Zucchini
- Garlic
- Chicken bone broth
- Cream cheese
- Emmental cheese
- Fresh parsley
- Worcestershire sauce
- Black pepper

- Parmesan cheese
- Crisped and crumbled bacon or pork belly
How to Make Keto Chicken Cordon Bleu Casserole
- Prep. Preheat the oven to 375F; spray the inside of a 1.5-quart casserole dish with cooking spray. Get out the ingredients.
- Cook the vegetables in a skillet. Add the butter to a large skillet over medium heat. Once hot, add the onion and zucchini, and cook until starting to soften, about 5 to 8 minutes, stirring occasionally. Turn the heat down as necessary if the vegetables start to brown too much before they soften. Add the garlic and cook 1 minute more, stirring constantly.
- Make the creamy sauce right in the same skillet with the cooked vegetables. Add the broth and bring up to a simmer. Add the cream cheese and stir until smooth; let it simmer a couple minutes until thickened slightly, stirring frequently.
- Add the cheese, seasonings, and chicken. Whisk in 2/3 of the Emmental cheese a handful at a time (reserving 1/3 of the cheese for topping) until fully incorporated. Stir in the parsley, Worcestershire, and black pepper. Stir in the shredded chicken. Remove from the heat.
- Bake. Transfer the mixture to the prepared casserole dish. Sprinkle the remaining 1/3 of the Emmental cheese and the Parmesan on top. Cover the casserole with foil and bake until warm. Remove the foil and broil the casserole for a couple minutes to brown the top.
- Serve. Sprinkle the crisped bacon on top and dig in!

- Make sure the cream cheese is at room temperature. This will help it blend into the chicken bone broth to create a rich, creamy sauce for our Chicken Cordon Bleu Casserole.
- You can make sure the sauce is as thick or thin as you want it. In step 3 of the recipe, let the sauce cook for a few minutes on the stovetop while stirring until it’s as thick as you want it. And on the other hand, if you want the sauce thinner, simply add more chicken bone broth.
- Bump up the crunch factor. The crispy bacon on top adds the delicious crunchy component that breading typically gives to Chicken Cordon Bleu. But if you want to bump up the crunch even more, top with a handful of crushed pork rinds!
- If you want to brown the cheese on top. Remove the foil and run the casserole under the broiler for a couple minutes.

Chicken Cordon Bleu is frequently served with a creamy cheese sauce drizzled on top.
The sauce is made by melting butter and whisking in flour to make a roux. And then milk is whisked into the roux. Once the sauce comes to a simmer, it thickens to a creamy white béchamel sauce. And then, seasonings (such as salt, pepper, Dijon mustard, etc.) are whisked in along with shredded cheese (like Emmental, Parmesan, or Gruyère). Once the cheese is incorporated, it’s now known as a mornay sauce.

Easy Keto Chicken Cordon Bleu Casserole
Ingredients
- Olive oil cooking spray
- 1 tablespoon unsalted butter
- 1/2 small onion diced
- 1 pound zucchini sliced
- 2 large cloves garlic crushed
- 1 cup chicken bone broth or chicken stock
- 4 ounces cream cheese at room temperature
- 2 ounces Emmental cheese shredded (or Swiss cheese), divided
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon Worcestershire sauce
- 1/8 teaspoon black pepper
- 2 cups cooked shredded chicken see Note
- 2 tablespoons grated Parmesan
- 2 tablespoons crisped and crumbled bacon or crisped pork belly (see Note)

I wonder why you didn’t IP this, maybe because you’re using pre-cooked chicken? I going to use skinless and boneless thighs, add mushrooms for more nutrition, hp for 5 mins and natural release, then put in oven to brown and serve with broccoli and crispy bacon. What’s not to love 🙂
