Instant Pot Chuck Roast is easy to make with minimal hands-on prep time, and is tender and delicious every time! You can use the meat to make a ton of different meals, so it's perfect for meal prep.
Pat the meat dry with paper towels. Season on both sides with salt and black pepper.
Turn the Instant Pot on to the “Sauté” function. Wait 2 minutes for it to heat up, and then add the oil and the chuck roast. Let it sear on the first side, and then flip it and let it sear on the second side.
Add the Worcestershire sauce, garlic, and water (or beef stock).
Secure the lid. Turn the pot on to Manual, High Pressure for 60 minutes, and then let it do a natural pressure release.
Shred the beef with 2 forks, and then transfer it to a serving platter.
Sprinkle the parsley on top and serve.
Notes
You can skip the searing step if you don’t want to get a pan dirty. We highly suggest you do sear the meat first though! It helps improve the flavor of the meat.
