Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic crushed
  • 2 teaspoons minced fresh rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 1- inch thick lamb loin chops about 2 pounds/907 grams

Instructions

  • Stir together the oil, lemon juice, garlic, rosemary, salt, and black pepper in a large bowl. Add the lamb and toss to coat. Cover the bowl, transfer it to the fridge, and let it marinade for at least 2 hours or up to 1 day.
  • Let the meat sit at room temperature for 15 minutes before grilling.
  • Grill the lamb chops over medium to medium-high heat until they reach your desired level of doneness, flipping once halfway through. These take about 4 to 6 minutes per side for rare and 5 to 7 minutes per side for medium-rare.
  • Transfer the chops to a platter and let them rest for 3 minutes. Serve.

Notes

  • Make sure you let the meat marinate for at least 2 hours, but if you have the time 24 hours is best.
