Marinated Grilled Lamb Chops with Garlic and Rosemary
Tender, juicy, and flavorful Marinated Grilled Lamb Chops with Garlic and Rosemary look impressive and elegant, but are so easy to make. The only trick is to let them marinade! They’re perfect for any summer gathering.
Stir together the oil, lemon juice, garlic, rosemary, salt, and black pepper in a large bowl. Add the lamb and toss to coat. Cover the bowl, transfer it to the fridge, and let it marinade for at least 2 hours or up to 1 day.
Let the meat sit at room temperature for 15 minutes before grilling.
Grill the lamb chops over medium to medium-high heat until they reach your desired level of doneness, flipping once halfway through. These take about 4 to 6 minutes per side for rare and 5 to 7 minutes per side for medium-rare.
Transfer the chops to a platter and let them rest for 3 minutes. Serve.

Make sure you let the meat marinate for at least 2 hours, but if you have the time 24 hours is best.
