Garlic Butter Mashed Cauliflower

- 1/2 head of cauliflower our was medium sized
- 2 cloves of garlic peeled
- 2 tbsp unsalted butter
- 1/4 tsp salt
- 1/8 tsp black pepper
- fresh thyme optional for garnish
Add the cauliflower and garlic cloves to a medium saucepan and cover with cold water. Bring to a boil, and then turn the heat down a bit so it doesn’t boil over. Continue cooking (covered) until the cauliflower is easily mashable, about 8 minutes. Drain well.
Add the cauliflower and garlic cloves, butter, salt, and black pepper to a food processor and process until smooth.
Transfer to a serving dish and top with thyme if desired.
