Ingredients

  • 8 ounces chicken breast cooked and chopped
  • 1/2 small shallot minced
  • 6 tablespoons mayo
  • 2 tablespoons minced fresh parsley
  • 1 teaspoon minced fresh thyme
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon sweet paprika
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 3 tablespoons toasted almond for topping
  • 3 large stalks celery cut into sticks
  • 1/2 cucumber cut into rounds

Instructions

  • Stir together all ingredients except the almonds. Sprinkle the almonds on top of the chicken salad
  • Serve the chicken salad along with the celery and cucumber for dipping.
