Instant Pot Keto Creamy Garlic Broccoli Mash

Rich, creamy, and garlicky, this keto green broccoli mash will become your to-go veggie mash side dish!
  • 1 tablespoon unsalted butter
  • 2 large cloves garlic, crushed
  • 2 medium heads broccoli (about 1 lb/450 g), chopped
  • ½ cup (120 ml) water
  • 4 oz (115 g) cream cheese
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes (optional)
  1. Turn pressure cooker on, press “Sauté”, and wait 2 minutes for the pot to heat up. Add the butter and once melted, add the garlic. Cook 30 seconds, stirring constantly. Press “Cancel” to stop sautéing.
  2. Add all remaining ingredients to the pot. Turn the pot on Manual, High Pressure for 1 minute and then do a quick release.
  3. Mash the broccoli with a potato masher, or use an immersion blender if you like it smoother. Taste and add additional salt and pepper if desired.
  4. Serve.
