Keto Chorizo Vegetable Hash with Fried Egg looks like a standard hash, but is chock full of nutritious vegetables as well as flavor.
  • 2 tablespoons olive oil
  • 1 (4-inch/85 g) link chorizo sausage, diced
  • 2 large stalks celery, diced
  • 1 small zucchini, cubed
  • ½ bell pepper, diced
  • ½ small onion, diced
  • 2 large cloves garlic, minced
  • 2 fried eggs
  • ½ oz/15 g fresh-grated or fresh-shaved Parmesan cheese
  • Black pepper
  1. Heat the oil in a medium skillet over medium heat. Once hot, add the chorizo and cook until browned, about 3 minutes, stirring occasionally.
  2. Add the celery, zucchini, bell pepper, and onion; turn the heat up to medium-high and cook until the veggies are softened, but not mushy, about 5 minutes, stirring frequently.
  3. Add the garlic, turn the heat down to medium, and cook 1 minute, stirring constantly.
  4. To serve, divide the hash between 2 plates. Top each with a fried egg and half of the cheese.
